The key for me has been something from a Scott Manley video - if you have the docking port of the target vehicle set to be normal to orbit, then the port itself might roll but won't otherwise move around, making it easier to dock (assuming the docking port is aligned with the axis of your target). You don't have to be 100% lined up, but it certainly helps you to get it pretty close. Each press of an RCS key has a much smaller impact so you don't overcorrect as much.

The roll/pitch/yaw indicators in the lower-left turn blue instead of red when you're in this mode. Press your caps lock key to toggle between fine & normal modes. I do tend to use 'fine control' RCS mode, after getting within a few meters. From what I understand, it remaps your pitch & yaw keys so that they do translation instead.
